The classic lime has a green (sometimes pale green!) textured rind with a juicy, tart flesh. The California grown Bearss or Persian Limes tend to be lighter in color then the limes imported from Mexico. The juice content is very high and gives amazing flavor to many dishes, drinks, and garnishes.
